Orecchiette With Parsnips & Bacon
Ingredients:
- 1 box Orecchiette Pasta
- 1 onion
- 4 medium parsnips
- 6 slices bacon
- Parmesan cheese
- Extra virgin olive oil (EVOO)
- salt & pepper
Directions:
- Broil bacon on high (6 minutes each side) until crispy. Drain on paper towel.
- Preheat oven to 425
- Peel and chop onion
- Peel and chop parsnips
- Pour onto cookie sheet
- Drizzle with EVOO and add salt and pepper and roast in oven
- While veggies roast cook pasta according to package
- Drain pasta and pour into bowl
- Toss roasted veggies into pasta
- Top with crumbled bacon and parmesan cheese
