Orecchiette With Parsnips & Bacon

Ingredients:

  • 1 box Orecchiette Pasta
  • 1 onion
  • 4 medium parsnips
  • 6 slices bacon
  • Parmesan cheese
  • Extra virgin olive oil (EVOO)
  • salt & pepper

Directions:

  1. Broil bacon on high (6 minutes each side) until crispy.  Drain on paper towel.
  2. Preheat oven to 425
  3. Peel and chop onion
  4. Peel and chop parsnips
  5. Pour onto cookie sheet
  6. Drizzle with EVOO and add salt and pepper and roast in oven
  7. While veggies roast cook pasta according to package
  8. Drain pasta and pour into bowl
  9. Toss roasted veggies into pasta
  10. Top with crumbled bacon and parmesan cheese
  11. ENJOY!
