Stuffed Artichokes
Ingredients:
- Artichokes
- Lemon
- Garlic
- Seasoned Bread Crumbs
- Parmesan Cheese
- Extra Virgin Olive Oil (EVOO)
Directions:
- Slice bottom of artichoke and carve X in the bottom
- Cut tops off of artichoke and snip the points off the remaining leaves
- Peel the biggest, bottom leaves off the artichoke
- Rub cut lemon on the bottom (to prevent it from going brown)
- In small bowl mix 4 bulbs of minced garlic, 1/4 cup bread crumbs, and parmesan cheese
- Stuff artichoke leaves with bread crumb mixture (you will need to make more breadcrumb mix according to the number of artichokes you make)
- Drizzle EVOO on the top of the stuffed artichoke
- Place artichoke in a pot filled with one inch of water
- Simmer on stove for one hour, or until leaves pull easily from artichoke.
