{"id":192,"date":"2008-06-18T17:53:54","date_gmt":"2008-06-18T21:53:54","guid":{"rendered":"http:\/\/judithnatellimclaughlin.com\/?p=192"},"modified":"2014-05-24T00:07:58","modified_gmt":"2014-05-24T00:07:58","slug":"why-should-we-care-about-watermelon","status":"publish","type":"post","link":"http:\/\/judithnatellimclaughlin.com\/?p=192","title":{"rendered":"Blog: Why Should We Care About Watermelon?"},"content":{"rendered":"<p style=\"text-align: justify;\" align=\"center\">I got a shout out from a friend, Margaret D. yesterday.\u00a0 She told the funniest story about how her grandma bought a HUGE watermelon for a Fourth of July celebration and Margaret and her brother ate tons of it.\u00a0 They noticed a cup about a foot away from them and tried to spit the seeds in the cup, each one telling the other they were better at it.\u00a0 In the end, neither Margaret nor her brother got one seed in!\u00a0 But they did get to eat that watermelon, which makes\u00a0them both winners.\u00a0 So, why should we care about eating watermelon?\u00a0 Because sweet, juicy watermelon is actually packed with some of the most important antioxidants in nature. Watermelon is an excellent source of vitamin C and a very good source of vitamin A, notably through its concentration of beta-carotene. Watermelon is also a very concentrated source of the carotenoid, lycopene.\u00a0Lycopene has been extensively studied for its antioxidant and cancer-preventing properties.\u00a0 So make sure you put this sweet and crunchy fruit that just SCREAMS summertime on your shopping list, not only for your Fourth of July barbeque, but for everyday eating as well.
