Blog: It’s All About Zucchini (And Watermelon!)

So, I was checking out Rachael Ray’s website this morning and the food of the week for her New Food Crew is…..Zucchini.  Guess what?  Zucchini is the first veggie poem I ever wrote and it remains one of my favorites!  It is fun, melodic, and when you are done reading it, you’ll certainly want to try eating it.  Check it out at today’s poem of the day.  Why should we care about Zucchini?  Because Zucchini is low in calories and packed with folate, potassium and vitamin A. And, it’s a great time to try this new food because Zucchini flourish in summer.

Another great summertime food is watermelon!  Sweet, juicy watermelon is actually packed with some of the most important antioxidants in nature. Watermelon is an excellent source of vitamin C and a very good source of vitamin A, notably through its concentration of beta-carotene. Watermelon is also a very concentrated source of the carotenoid, lycopene. Lycopene has been extensively studied for its antioxidant and cancer-preventing properties.  And in case you haven’t heard, I am reciting my Watermelon poem live on the CW 11 Morning News Show this Friday, July 4th.  The approximate time is 8:35 a.m.  I am so excited to appear with Linda Church, recite my poem and do a little weather forecasting too!  Check it out this Friday and Happy 4th everyone!
