Asparagus Quiche
Ingredients:
- pre-made crust
- 1 1/2 cups milk
- 4 eggs
- 8 oz. ricotta cheese
- 8 oz. cheddar/jack cheese
- salt
- pepper
- nutmeg
- extra virgin olive oil
- 1/2 cup cubed, roasted sweet potato
- sautéed mushrooms and onions (8 mushrooms & 1/2 onion)
- 5 asparagus spears
Directions:
- Preheat oven to 350
- Place crust in pie plate
- Roast 1/2 cubed sweet potatoes (20 minutes)
- Sautée mushrooms and onions in olive oil
- In bowl mix milk, eggs, a dash of salt, pepper & nutmeg, ricotta and shredded cheeses (reserving a little shredded for topping)
- Layer sweet potatoes and veggies on bottom of pie crust
- Cover with milk mixture
- Place asparagus spears on top and sprinkle with cheese
- Bake for 60 minutes (or until golden brown)
