Asparagus Quiche

Ingredients:

  • pre-made crust
  • 1 1/2 cups milk
  • 4 eggs
  • 8 oz. ricotta cheese
  • 8 oz. cheddar/jack cheese
  • salt
  • pepper
  • nutmeg
  • extra virgin olive oil
  • 1/2 cup cubed, roasted sweet potato
  • sautéed mushrooms and onions (8 mushrooms & 1/2 onion)
  • 5 asparagus spears

Directions:

  1. Preheat oven to 350
  2. Place crust in pie plate
  3. Roast 1/2 cubed sweet potatoes (20 minutes)
  4. Sautée mushrooms and onions in olive oil
  5. In bowl mix milk, eggs, a dash of salt, pepper & nutmeg, ricotta and shredded cheeses (reserving a little shredded for topping)
  6. Layer sweet potatoes and veggies on bottom of pie crust
  7. Cover with milk mixture
  8. Place asparagus spears on top and sprinkle with cheese
  9. Bake for 60 minutes (or until golden brown)
